Plain pumpkin purée
½ cup — not pumpkin pie filling
Eggs
2 eggs
Xylitol-free peanut butter
2 tablespoons
Oat flour
1½ cups
Optional cinnamon and water
½ teaspoon cinnamon; 2–4 tablespoons water as needed
Step by step
Method
- 1Preheat the oven to 175°C / 350°F.
- 2Mix the banana, pumpkin, eggs, and peanut butter.
- 3Stir in the oat flour and optional cinnamon.
- 4Add water gradually until you have a thick cake batter.
- 5Pour into a greased 15 cm / 6-inch cake tin and bake for approximately 25–30 minutes, until firm and cooked through.
- 6Cool completely before decorating.
