Ingredients

Oat flour

1 cup

Carrot

1 medium carrot, finely grated

Unsweetened applesauce

½ cup, made from peeled, seedless apple only

Egg

1 egg

Plain Greek yogurt or water

2 tablespoons

Optional peanut butter and baking powder

1 tablespoon xylitol-free peanut butter; ½ teaspoon baking powder

Step by step

Method

1Preheat the oven to 175°C / 350°F.
2Combine all ingredients.
3Spoon into a small greased cake tin or silicone molds.
4Bake for 20–25 minutes.
5Cool fully before frosting.
6Never include apple cores or seeds.
